Monbazillac
2005
The
Yvon Mau wine-trading company was founded in Bordeaux's
Gironde sur Dropt in 1897.
Around
the turn of the century, the son of the founder,
Yvon, could often be found
riding around the Entre-Deux-Mers region
on
his bicycle searching for new wines.
Thus was born the “Bordeaux discoverer." A few years
later,
the company adopted his name to serve as its identity
and placed his silhouette on a penny farthing for
its emblem.
The
company has since grown to become one of the major
players in Bordeaux wines, while remaining
true to
the roots of its region and village of origin.
Seigneurs
de Monbazillac is a delightful blend of the traditional
Bordeaux white grapes: 30% Sauvignon Blanc, 60% Semillon,
and 10% Muscadelle. It shows honeyed fruits and soft,
nutty flavors leading to a finish that is long and
enduring. This wine is wonderful as an aperitif,
or pair it with well-aged cheeses or light, fruit-based
desserts.
The
wine is made using grapes with "noble rot," all
of which
are hand-picked and -sorted. The must is
racked in cold conditions, with fermentation
occurring at a higher, controlled temperature
until the right sugar/alcohol balance is achieved.
The
fermentation
is then stopped by sudden cooling, followed by filtration
and sulphiting.
