White Wine

San Antonio Valley, Chile

 

Apaltagua "Costero" Extra Brut

The estate vineyard is situated on the edge of the Chilean Coastal Mountain Range, only 12 kilometers from the Pacific Ocean in the cool-climate San Antonio Valley appellation.

Both varieties are harvested by hand, with the Chardonnay always harvested a bit more mature than the Sauvignon Blanc in order to give the optimal balance between the freshness of the Sauvignon Blanc and the full body of the Chardonnay.

Secondary fermentation takes place in the bottle, a la Champagne, hence the very fine perlage. The wine is pale gold in color, with clean aromas of white fruits, crusty bread, hazelnuts, and delicate buttery notes. In the mouth, it is creamy with subtle flavors of green fruits on the long and lingering finish.

Domaine du Prieuré Hautes Côtes de Beaune

Jean-Michel Maurice grew up surrounded by wine-growing, and after studying in Beaune and the University of Dijon, he assumed the family domaine in 1981. His particular focus has been Hautes Côtes de Beaune in particular – plots that had always been farmed before the phylloxera crisis. The estate vineyard is on a slope with a good south exposure and shallow soils, which allows good yield management and gives exceptional power to this regional appellation.

This 100% Pinot Noir has a dark hue, with fresh red fruit aromas that will evolve into candied fruit and sauvage notes as it matures. Firm and complex in the mouth, accentuated by good acidity and solid tannins, drink over the next 1 – 3 years with the “Salmon Chowder” recipe from our Wines by Jennifer Cookbook!
